Coconut Milk Tilapia
- An Asian Dish Inspired From Thailand


This is a very easy fish recipe. Tilapia is a tropical river fish. It is a boney fish, but very tasty when prepared.

Filleting the fish before simmering in a seasoned coconut milk sauce gives it a luxurious flavor and ensures that the diner does not have to deal with the bones.

The Coconut Milk Tilapia dish should be served over a bed of rice or with potatoes or yams.

Coconut Milk Tilapia

Ingredients:

 

      (1) Coconut milk -- 1/2 Cup
      (2) Almonds -- 6 whole
      (3) Ground ginger -- 1 tsp.
      (4) Ground turmeric -- 1/2 tsp.
      (5) Chopped fresh lemon grass -- 1 tsp.
      (6) Salt -- 1/4 tsp.
      (7) Tilapia Fillets -- 4 4 oz.
      (8) Red pepper flakes -- 1/2 tsp., or to taste
      (9) Chopped white onion -- 2 Tbs.
      (10) Salt and pepper to taste
Preparation:
Yield: 4 servings
  • In a food processor or blender, combine the coconut milk, almonds, onion, ginger, turmeric, lemon grass, and 1/4 tsp. of salt. Process until smooth.
  • Heat a large non-stick skillet over medium-high heat.
  • Season the fish fillets with salt and pepper on both sides, then place them skin-side up in the skillet.
  • Pour the pureed sauce over the fish. Use a spatula to coat the fish evenly with the sauce.
  • Sprinkle with red pepper flakes. Reduce heat to medium, cover, and simmer for about 15 minutes, until the puree is thickened and fish flakes easily with a fork.
